CHOP SUEY

Love a good SUEY?

That is right SUEY!

Chop Suey

~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
This a little different kind of suey, my grandparents added a little bit of their
own twist to it.  It is great over grits, I swear to you it is. On rice and on Chow Mein Noodles.  It is a soup it is a stew. It is just good.
  1. Boston Butt or Pork Shoulder
  2. Celery
  3. Onion
  4. Bacon
  5. Bean Sprouts
  6. Chow Mein Vegetables
  7. Soy Sauce
  8. Corn Starch
( I only use the La Choy Vegetables and Bean Sprouts, you can add baby corn to it also)
Boil pork until well done, with salt and pepper. Leave in juice you will need the stock for your suey.
In a frying pan fry bacon, until crisp. In the bacon grease fry celery and onions, until done.
Remove from grease (keep grease)
Cut up pork and fry in grease. Just until it has a light crust on it, dump meat, left over grease , celery, onion in juice of pork.
Add vegetables, bean sprouts, soy sauce till taste.
Simmer for about 30 minutes
In a small bowl add about 3 Table spoons of corn starch in a bowl with a little bit of water.
 Add to suey, while boiling.  This will thicken the juice up.
Serve over rice, noodles, grits, or just eat as a soup.
