CHICKEN AND RICE CASSEROLE

I crack myself up!




My Aunt Marion Bazzel was an amazing cook,
I guess it runs in the Hiott/Farrell line cause her and 
my Mammy were such great cooks. 

One thing I always loved was going to her house, and the only thing that made it better was when she cooked 
Chicken & Rice. 
Is there anything better than Chicken and Rice? 
NO!
She would made it the same but different every time, one day I watched her, she cut that fryer up so fast, she said she was gong to try something new, something she seen on TV.  This was what she came up with and it was ohh so good!




Chicken & Rice Casserole


  • 1 can of cream of mushroom soup
  • 1 can of cream of chicken soup
  • 1 pkg onion soup mix
  • 1/2 stick butter
  • 1 cup uncooked rice
  • 2 cans of water
  • 2 lbs boneless chicken breast
Line the pan with foil and grease the bottom with butter. Mix first three ingredients.  Add water, mix well. Pour into pan. 
Cut chicken in small pieces,  add washed rice, chicken and butter. I cover with foil, so the rice will not get hard.  Bake at 350* for one hour.  Stir occasionally.
