You can not go wrong with casserole's. You throw a bunch of stuff in a dish and mix it up and bake! Either it is good and everyone loves it or it sucks and you feed it to the dog. But casserole's are a great way to feed a group of growing boys.

ENCHILADA CASSEROLE
- .2 pounds hamburger meat,
- med. package corn tortillas,
- chorizo (optional),
- 1 med can enchilada sauce
- 2-4 cups of cheese.
You can use 4 small chorizo or 2 large chorizo sausages.
- Fry all the hamburger meat
- (plus chorizo if you used it)
- Drain off the fat
- Add the enchilada sauce.
- Line the bottom a 9x13 baking dish with tortillas.
- Spoon half the meat and sauce mixture onto the tortillas.
Repeat Tortilla Layer
- Then spoon half of the meat and sauce mixture onto the tortillas
- Add a third layer of tortillas
- Spread cheese on top of the third layer of tortillas
- Bake in a 350 degree oven until cheese is melted is hot through.
