SQUASH CASSEROLE

- 2 lbs Squash ( some cooks scrape the squash) cooked with salt and pepper to taste.
- 1 stick of margarine
- 1 can of cream of chicken soup
- 1 small onion chopped (if you like to cook the onion in your squash you can)
- 1 Bell Pepper ( optional) ( I never use them in mine)
- 1 cup grated sharp cheese
- You can use a few things for these, which ever you like
- Soda Crackers
- Toasted Bread
- Pepper Farm Herb Seasoned Stuffing Mix
- Ritz Crackers
Cook squash and drain very well,
saute onions, and peppers in margarine, turn heat off and mix in soup, and cheese. Mix well.
Add to cooked squash, while still hot, mix well but to to pour into strayed casserole dish.
Top with crumbs of your choice, and cheese
Bake @ 350* for 20 to 30 minutes, or until bubbling and top is slightly brown.
